Jackfruit is famously known as the world's largest tree-borne fruit. Bill Mollison, one of the founders of the agricultural ethos known as permaculture and a perennial jokester, once quipped that he hoped to be done-in by a plummeting jackfruit. It is not entirely unlikely that this would happen seeing as how these pendulous fruit can exceed one hundred pounds in ideal soil conditions! Here in South Florida it is more typical to harvest fruits ranging from twenty to sixty pounds, although shipping anything exceeding thirty pounds proves impractical.

The flavor of ripe jackfruit is that of pineapple and banana infused with the insistent aroma of vanilla bean. Some at ripeness attain the chewiness of gummy candy, and others, more mild in flavor, maintain a certain crunchy firmness. The fruit's edible flesh is sculpted in divisible segments that surround the equally edible, protein-rich seeds. Unripe jackfruit may also be cooked as a vegetable, a role in which it rivals even the avocado and tomato in their culinary flexibility as fruits.
